Mini Banana Loaves
60g canalo/sunflower oil
105g soft brown sugar2 eggs1/2 tsp vanilla essence
150g banana, mashed
20g ground almonds
200g superfine flour
3/4 tsp baking powder
1/4 tsp bicarbonate of soda
2 tbsp milk
Some almond flakes
Grease 5 mini loaf pans and preheat oven to 170 degrees C
Beat butter and canola/sunflower oil, sugar and essence until creamy. Add egs, one at a time beating well after each addition.
Mix in mashed bananas, ground almonds and sultanas.
Sift in flour, baking powder and bicarbonate of soda to combine then add in milk but do not over mix.
Spoon mixture into mini loaf pans until three-quarters full. Bake for 20-25 minutes or until cooked through when tested with a skewer.
