Fried Chicken ala KFC


My children love to eat fried chicken. Usually I will just mix the chicken (cut into pieces) with tumeric powder and salt, and some curry leaves. Marinate for about 20 mins and deep fry. But then, I saw this recipe from a newspaper. So, I might try this out too.

1 Kg chicken drumsticks and wings

Seasoning (A) (combined)
1/2 tsp salt
1/2 tsp sugar
1/2 tsp pepper
100ml UHT milk

Ingredients (B)
200g plain flour, sifted
3/4 tsp baking powder
3/4tsp bicarbonate of soda
3/4 tsp chicken stock granules
1/2 tsp garlic salt
3/4 tsp dried oregano
3/4 tsp dried parsley
3/4 tsp dried thyme
1/2 tsp ground black pepper

Put combined seasoning (A) in a mixing bowl. Add clean chicken drumsticks and wings. Toss well and allow to marinate for at least an hour in the refrigerator.

Put combined ingredients (B) into a small plastic bag. Shake well then pour into a large mixing bowl. Drain off excess liquid from the marinated chicken then dip the pieces into the combined flour mixture. Press the pieces one by one or until each one is well coated with the flour mixture. Shake off excess flour and arrange them neatly in a plastic container. Close tightly and refrigerate for at least 25-30 minutes.

heat enough oil in a wok or any electric deep-fryer until oil is medium hot. Place in the chicken pieces a few at a time. Deep-fry until golden brown and the skin is crisp.
